I must be missing something super-basic, but when I go to create a new page, how do I designate that it is to be 'full width', 'sidebar right' etc?

I would automatically have gone to 'Page templates' but all there is in that box is 'Default' or 'Contact'.

Am I missing something; I couldn't see this in the theme doc.
